There are more and more demands for dishes from wild grown herbs

Despite the fact that in Istria there are around 600 different sorts of edible wild grown herbs, only 25% are consumed and used in diet.

According to Franko Zgrabić, one of the most educated pickers of edible herbs in Istria, the reason for this is the fact that the working man does not have much time for walking and familiarizing himself with products of nature, that is to slowly consume anything but so called fast-food. However, things are improving, in recent years people have expressed more interest in consuming different sorts of edible herbs, weather in liquid, salads or as «green» side dish.

The cook Josip Pino Kuhar calls wild grown edible herbs a food of the future. However, due to their undisputed quality, specific climate in which they are sprouted, seldom and scarcely, their recipes and technique of preparation they are often inaccessible to those who would like to taste them. On the other hand, wild grown edible herbs prepared in restaurants and farms are more and more appreciated and sought out along the culinary map of Istria.
