TRADITIONAL ISTRIAN COUSINE ENRICHED
WITH WILD GROWING HERBS

For desert, breaded elder flower with sour cherry sauce

Within preparations for the upcoming season, in the well-known restaurant „Santa Croce“, the tourist community has organized presentations of traditional Istrian meals prepared on the basis of wild growing herbs.

Director of the Tourist Community, Dario Činić, emphasized that the purpose of these presentations was to introduce the guests of Rovinj as well as the caterers and hoteliers, to the richness and variety of Istrian culinary offer, and in this particular case, to meals prepared from the natural and wild growing herbs.

 

For a large number of guests, cooks Josip Pino Kuhar, Kristijan Matijević and Kristijan Putina prepared several courses. The gastronomic table included asparagus salad with cooked potatoes, rocket rolled in parmeggian, goosefoot with fresh cheese and chopped tomatoes, and wild grown herbs with fish and meat Carpaccio.

Tasting of crab risotto followed, accompanied with gnocchi with mushrooms and herbs, and green pasta sprinkled with mint leaves.

The main course was sea bass file, chicken role with leprinom and pancetta made from tuna. The final course was serving of breaded elder flowers with sour cherry sauce.

It should also be noted that all meals were accompanied with good wine selection, courtesy of restaurant owners Dean and Michela Cerin.
